|1 package Angel Hair Pasta, (16 oz.)|
|1 medium Onion, thinly sliced|
|1/3 cup Vegetable Oil|
|1 cup Fully Cooked Ham, (Leftover Ham is Great!), cubed|
|1/2 cup Chicken Broth, (Low Sodium)|
|1/4 cup meltedmargarine or butter|
|2 Egg yolks, beaten|
|1/2 cup Fresh Parsley, minced|
|1/2 cup Parmesan Cheese, grated|
- Cook the pasta as directed on the package.
- While pasta is cooking, in a skillet saute the onion in oil. Add the ham, broth and margarine and heat through.
- Add the cooked and drained pasta to ham mixture.
- Pour in egg yolks and cook until the eggs are completely set. Sprinkle with Parsley and Parmesan Cheese and toss to coat.
