Parmesan Basil Salmon

Ingredients:

1 1/2 lbs Fresh Salmon
Juice from 1/2 a Lemon
1/2 Tsp Salt
1/4 Tsp Black Pepper
4 Tbsp Mayonnaise
8-10 Basil Leaves, finely chopped
4 Tbsp Grated Parmesan Cheese

Directions:

  1. Preheat the oven to 425 degrees F. Line a baking sheet with parchment paper.
  2. Place the salmon on the baking sheet. Drizzle with the juice from ½ a lemon and sprinkle with the salt and pepper.
  3. Combine the mayonnaise, ¾ of the chopped basil, and 3 Tbsp parmesan cheese in a small bowl.
  4. Spread the mixture completely over the salmon. Sprinkle the remaining Tbsp parmesan cheese on top.
  5. Bake for 18-20 minutes or until cooked through and an internal temperature of 145 degrees F is reached.
  6. Slice into 4 equally sized pieces and serve warm. Garnish with the remaining chopped basil. Enjoy!
