Gnocchi with Roasted Garlic and Parmesan





Serves 2
Ingredients:
| 1 package mini gnocchi, (16 oz.) |
| 1 bulb roasted garlic, squeezed out |
| 1/4 cup mascarpone cheese |
| 1/4 cup minced fresh chives |
| Red Cow parmesan |
| Salt, to taste |
| Pepper, to taste |
| 2 tablespoons olive oil |
| 1 slice bacon, cooked and chopped |
| 1 tablespoon lemon juice |
Directions:
- To roast garlic, cut off top of bulb to expose cloves. Place cut side down in baking dish with 1 Tbsp. olive oil & bake at 350 degrees F for 1 hour.
- For gnocchi, place mascarpone & garlic in medium size bowl. Cook gnocchi according to instructions, drain and while still hot put in bowl with mixture. Toss to coat, then add chives, parmesan, salt & pepper, lemon and oil. Toss to coat again and serve immediately!
