Roasted Red Pepper with Burrata Cheese

Ingredients:

2-3 Red Bell Peppers
4 oz Burrata Cheese
Olive Oil, for serving
Salt & Pepper
Fresh Sliced Baguette, for serving
Fresh Basil, for garnish

Directions:

  1. Preheat the oven to 450 degrees F. Line a baking sheet with parchment paper.
  2. Remove the core and seeds from each bell pepper. Slice and place cut side down on the baking sheet.
  3. Bake for 20-25 minutes or until slightly charred and wilted. Let cool for about 5 minutes on the counter.
  4. Use your fingers to peel off the outer layer of skin (the charred part).
  5. Slice into strips.
  6. Place the burrata cheese in the center of a plate. Add the roasted red peppers and sliced baguette around the cheese. Drizzle the red peppers with olive oil and sprinkle with salt and pepper. Garnish with fresh basil.
  7. Serve immediately.
