Roasted Red Pepper with Burrata Cheese

Ingredients:
2-3 Red Bell Peppers
4 oz Burrata Cheese
Olive Oil, for serving
Salt & Pepper
Fresh Sliced Baguette, for serving
Fresh Basil, for garnish
Directions:
Preheat the oven to 450 degrees F. Line a baking sheet with parchment paper.
Remove the core and seeds from each bell pepper. Slice and place cut side down on the baking sheet.
Bake for 20-25 minutes or until slightly charred and wilted. Let cool for about 5 minutes on the counter.
Use your fingers to peel off the outer layer of skin (the charred part).
Slice into strips.
Place the burrata cheese in the center of a plate. Add the roasted red peppers and sliced baguette around the cheese. Drizzle the red peppers with olive oil and sprinkle with salt and pepper. Garnish with fresh basil.
