Roasted Red Pepper with Burrata Cheese





Ingredients:
+ Add All Ingredients to Shopping List
2-3 Red Bell Peppers+ Add to Shopping List |
4 oz Burrata Cheese+ Add to Shopping List |
Olive Oil, for serving+ Add to Shopping List |
Salt & Pepper+ Add to Shopping List |
Fresh Sliced Baguette, for serving+ Add to Shopping List |
Fresh Basil, for garnish+ Add to Shopping List |
Directions:
- Preheat the oven to 450 degrees F. Line a baking sheet with parchment paper.
- Remove the core and seeds from each bell pepper. Slice and place cut side down on the baking sheet.
- Bake for 20-25 minutes or until slightly charred and wilted. Let cool for about 5 minutes on the counter.
- Use your fingers to peel off the outer layer of skin (the charred part).
- Slice into strips.
- Place the burrata cheese in the center of a plate. Add the roasted red peppers and sliced baguette around the cheese. Drizzle the red peppers with olive oil and sprinkle with salt and pepper. Garnish with fresh basil.
- Serve immediately.
