Ingredients:
| 1 lb Ground Beef, Ground Chicken, Ground Turkey, or Plant Based Meat |
| 1 Medium White Onion, diced |
| Salt & Pepper |
| 1 1/2 Cups Basmati Rice, uncooked |
| 1 Packet Taco Seasoning |
| 1 Tsp Garlic Powder |
| 3 3/4 Cups Chicken Broth or Vegetable Broth |
| 1/3 Cup Tomato Sauce |
| White Queso Cheese, store-bought or homemade |
Directions:
- Add the meat and onion to a large skillet and season with salt and pepper. Cook on medium heat until the onions are soft and translucent, and the meat is cooked through. Crumble the meat as it cooks. Do not drain any grease.
- Add the taco seasoning, garlic powder, ½ Tsp salt, ½ Tsp pepper to the skillet and stir to combine.
- Add the rice and stir to combine.
- Add the broth and tomato sauce and stir to combine.
- Bring to a boil. Once boiling, cover and reduce the heat to low. Simmer for 15-20 minutes or until the rice is tender. Remove from the heat and stir to fluff the rice.
- Microwave the queso in a microwave safe bowl until melted.
- Scoop into bowls to serve. Drizzle with the queso and serve immediately. Enjoy!
