Pepperjack Baked Eggs

Ingredients:

1 Tbsp Butter, softened
6 Eggs, beaten
8 oz Pepperjack Cheese, shredded
8 oz Cottage Cheese
1/4 Cup Flour
1 Tsp Salt

Directions:

  1. Preheat oven to 400 degrees F. Use your fingers to rub the softened butter all over the inside of an 8x8 baking dish.
  2. Whisk the eggs. Add the pepperjack cheese, cottage cheese, flour, and salt. Stir to combine. Pour into the baking dish.
  3. Bake for 35-40 minutes or until the eggs are completely set. Cut into squares and serve immediately, while still warm. Enjoy!
  4. ***Can double the recipe and use a 9x13 baking dish. Reduce the oven temperature to 350 degrees F and increase the bake time to 45-50 minutes.
