Thai Sweet Chili Ground Chicken





Ingredients:
| 1 lb Ground Chicken |
| 1 Yellow Bell Pepper, chopped |
| 1 Tsp Garlic Powder |
| 1/2 Tsp White Pepper |
| 1/2 Tsp Ground Ginger |
| 2 Tsp Sesame Oil |
| 1 1/2 Cups Thai Sweet Chili Sauce |
| 2 Tbsp Water |
| 2 Tbsp Cornstarch |
| 1/2 Cup Dry Roasted Peanuts, plus more for topping |
| Green Onions, sliced, for topping |
Directions:
- Heat olive oil in a large skillet over medium heat. Add the ground chicken and cook until cooked through, breaking apart as you cook.
- Add the yellow bell pepper and stir to combine. Continue to cook until softened.
- Add the garlic powder, white pepper, ground ginger, and sesame oil. Stir to combine.
- Add the Thai sweet chili sauce and stir to combine.
- Combine the cornstarch and water in a small bowl and add to the skillet. Stir to combine and continue to heat and stir until the sauce is thickened.
- Add the peanuts right before serving and stir to combine.
- Serve warm over a bed of rice. Garnish with additional peanuts and green onions. Enjoy!
