Thai Sweet Chili Ground Chicken

Ingredients:
1 lb Ground Chicken 1 Yellow Bell Pepper, chopped 1 Tsp Garlic Powder 1/2 Tsp White Pepper 1/2 Tsp Ground Ginger 2 Tsp Sesame Oil 1 1/2 Cups Thai Sweet Chili Sauce 2 Tbsp Water 2 Tbsp Cornstarch 1/2 Cup Dry Roasted Peanuts, plus more for topping Green Onions, sliced, for topping
Directions: Heat olive oil in a large skillet over medium heat. Add the ground chicken and cook until cooked through, breaking apart as you cook. Add the yellow bell pepper and stir to combine. Continue to cook until softened. Add the garlic powder, white pepper, ground ginger, and sesame oil. Stir to combine. Add the Thai sweet chili sauce and stir to combine. Combine the cornstarch and water in a small bowl and add to the skillet. Stir to combine and continue to heat and stir until the sauce is thickened. Add the peanuts right before serving and stir to combine. Serve warm over a bed of rice. Garnish with additional peanuts and green onions. Enjoy!
