Blueberry, Basil & Ricotta Bruschetta

Ingredients:
1 Cup Fresh Blueberries
2 Tbsp Honey
1 Tbsp Lemon Juice
1/2 Cup Ricotta Cheese
Fresh Basil, chopped
Balsamic Glaze, for topping
French Loaf or Baguette, about 8-10 slices
Directions:
Bake the bread according to package instructions. Let cool slightly and slice into 8-10 slices.
Add the blueberries, honey, and lemon juice to a sauce pan and heat over medium heat. Stir to combine and continue to heat for 5-6 minutes or until the blueberries have softened and start to release their juices. Remove from the heat and let cool.
Spread ricotta cheese on each slice of bread.
Top with the blueberry mixture and garnish with fresh basil.
Serve and enjoy immediately. Store any leftovers in an airtight container in the fridge.
