Blueberry, Basil & Ricotta Bruschetta





Ingredients:
| 1 Cup Fresh Blueberries |
| 2 Tbsp Honey |
| 1 Tbsp Lemon Juice |
| 1/2 Cup Ricotta Cheese |
| Fresh Basil, chopped |
| Balsamic Glaze, for topping |
| French Loaf or Baguette, about 8-10 slices |
Directions:
- Bake the bread according to package instructions. Let cool slightly and slice into 8-10 slices.
- Add the blueberries, honey, and lemon juice to a sauce pan and heat over medium heat. Stir to combine and continue to heat for 5-6 minutes or until the blueberries have softened and start to release their juices. Remove from the heat and let cool.
- Spread ricotta cheese on each slice of bread.
- Top with the blueberry mixture and garnish with fresh basil.
- Serve and enjoy immediately. Store any leftovers in an airtight container in the fridge.
