Sun-Dried Tomato Chicken Salad





Ingredients:
| 1 Rotisserie Chicken, deboned and shredded |
| 8 oz Jar Sun-Dried Tomatoes, drained and chopped |
| 2 Tbsp Flat Leaf Parsley, chopped |
| 2 Tbsp Capers, drained |
| 1/4 Cup Green Onion, sliced |
| 1/2 Cup Mayonnaise |
| 2 Tsp White Wine Vinegar |
| 1/2 Tsp Salt |
| 1/2 Tsp Black Pepper |
Directions:
- Remove the chicken from the bone and shred. Drain and chop the sun-dried tomatoes. Chop the parsley and slice the green onion. Add the chicken, sun-dried tomatoes, capers, parsley, and green onion to a mixing bowl and stir to combine.
- In a small bowl, combine the mayo, white wine vinegar, salt, and pepper. Stir to combine. Add to the chicken mixture and stir to coat.
- Cover and refrigerate for at least one hour to chill. When ready to serve, garnish with additional green onion. Enjoy!
