Ingredients:
1 Rotisserie Chicken, deboned and shredded
8 oz Jar Sun-Dried Tomatoes, drained and chopped
2 Tbsp Flat Leaf Parsley, chopped
2 Tbsp Capers, drained
1/4 Cup Green Onion, sliced
1/2 Cup Mayonnaise
2 Tsp White Wine Vinegar
1/2 Tsp Salt
1/2 Tsp Black Pepper
Directions:
Remove the chicken from the bone and shred. Drain and chop the sun-dried tomatoes. Chop the parsley and slice the green onion. Add the chicken, sun-dried tomatoes, capers, parsley, and green onion to a mixing bowl and stir to combine.
In a small bowl, combine the mayo, white wine vinegar, salt, and pepper. Stir to combine. Add to the chicken mixture and stir to coat.
Cover and refrigerate for at least one hour to chill. When ready to serve, garnish with additional green onion. Enjoy!
