Ingredients:
15 oz Can Chickpeas, drained and rinsed
1/2 Red Onion, chopped
1/2 Cup Flat Leaf Parsley, chopped
3 Garlic Cloves, minced
1 Pint Grape Tomatoes, sliced
2 Mini Cucumbers, chopped
1 Bunch Green Onion, thinly sliced
1/3 Cup Olive Oil
1/4 Cup Lemon Juice
1 Tsp Salt
1/2 Tsp Black Pepper
Directions:
Slice the tomatoes in half, chop the cucumbers, onion, green onion, and parsley. Mince the garlic. Drain and rinse the chickpeas. Add the chickpeas, onion, parsley, garlic, tomatoes, cucumber, and green onion to a mixing bowl. Toss to combine.
Prepare 2 cups of couscous according to package instructions. Set aside to cool slightly.
Add to the couscous to the mixing bowl and stir to combine.
Combine the olive oil, lemon juice, salt and pepper. Pour most of the dressing over the salad. Toss to combine. Taste and add additional dressing, as needed.
Serve warm and enjoy!
Store any leftover in an airtight container in the fridge. Add a small drizzle of olive oil to the salad and toss to combine before serving leftovers.
