Thai Sweet Chili Chicken Lettuce Wraps

Ingredients:
Olive Oil
1/2 White Onion, chopped
3-4 Garlic Cloves, minced
1 lb Ground Chicken
1/2 Cup Cashews, plus more for topping
3 Tbsp Soy Sauce
2 Tsp Lime Juice
6.4 oz Jar Thai Sweet Chili Sauce
Sesame Seeds, for topping
Bibb or Butter Lettuce
Directions:
Heat oil in a skillet over medium heat. Add the onion and garlic and cook until the onions are translucent, and the garlic is fragrant, about 2 minutes. Add the ground chicken and cook until cooked through.
Add the soy sauce and lime juice and stir to combine.
Add the entire jar of Thai sweet chili sauce and cashews and stir to combine. Reduce the heat to low and simmer for about 5 minutes. Remove from the heat.
Assemble the lettuce wraps. Add a heaping scoop of the chicken mixture into each lettuce cup. Garnish with additional cashews and a sprinkle of sesame seeds.
