Apple & Walnut Salad with Creamy Cinnamon Dressing

Ingredients:
4 oz Cream Cheese, softened
1/4 Cup Light Brown Sugar
1 Tsp Cinnamon
Pinch of Nutmeg
4 oz Sour Cream
1/2 Tsp Vanilla Extract
4 Crisp Apples, Honey Crisp or Gala work well, or use a combination of red and green apples
2 Cups Cold Water
2 Tbsp Lemon Juice
3/4 Cup Chopped Walnuts
1/2 Cup Dried Cranberries
Directions:
Make the dressing. Add the cream cheese, brown sugar, cinnamon, and nutmeg to the bowl of a stand mixer. Beat until well combined. Add the sour cream and vanilla and beat until combined. Set aside.
Combine the water and lemon juice in a large bowl. Cut the apples into cubes, discarding the core. Add the chopped apples to the water/lemon mixture and let soak for 1 minute. This will prevent the apples from browning. Use a slotted spoon to remove the apples to a paper towel lined plate to drain.
Combine the apples with the dressing, walnuts, and cranberries. Stir until well combined.
Transfer to a serving bowl and garnish with a few additional walnuts and cranberries (optional). Cover with plastic wrap and refrigerate for 30-60 minutes to chill before eating. Enjoy same day.
