Ingredients:
| 1 1/4 Cups Flour |
| 2 Tbsp Light Brown Sugar, packed |
| 2 Tsp Baking Powder |
| 1/4 Tsp Salt |
| 1 Tsp Cinnamon |
| 1/4 Tsp Nutmeg |
| 1/4 Tsp Ground Ginger |
| 1/8 Tsp Ground Cloves |
| 1 Cup Buttermilk |
| 1/2 Cup Canned Pumpkin, not pie filling |
| 1 Large Egg |
| 3 Tbsp Unsalted Butter, melted |
| 1 Tsp Vanilla Extract |
| Butter and Syrup, for topping |
Directions:
- Add the flour, brown sugar, baking powder, salt, cinnamon, nutmeg, ginger, and cloves to a large mixing bowl. Whisk to combine and set aside.
- Add the buttermilk, egg, canned pumpkin, melted butter, and vanilla extract to a separate mixing bowl. Whisk together.
- Pour the dry ingredients into the wet ingredients and stir to combine. The batter will be thick.
- Preheat an electric griddle to 300 degrees F. Lightly spray with cooking spray. Use a 1/3 measuring cup to scoop the batter onto the preheated griddle. Cook for about 2-3 minutes or until bubbles begin to form then flip and cook on the other side for 2-3 minutes or until golden brown. Repeat until all pancakes are made. You should have enough batter for about 12 pancakes.
- Serve warm with butter, maple syrup, and any other toppings of your choosing. Enjoy!
