Pumpkin Pancakes

Serves 20


Ingredients:

2 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon salt
1 tablespoon sugar, or substitute 2 cups pancake/waffle mix for all above
1 teaspoon pumpkin pie spice
2 eggs
1 3/4 cups milk
3 tablespoons melted butter, plus 1 tablespoon for frying
1/2 cup canned pumpkin
 

Directions:

  1. Sift together dry angredients with pumpkin spice in large bowl. In separate bowl whisk eggs and milk. Add 3 Tbsp. melted butter and pumpkin to egg mixture and whisk together. Pour wet over dry and stir until blended. A few lumps are okay!
  2. Heat remaining butter on griddle over medium-high heat and pour 1/4 cup for each pancake, flipping when bubbles form on top. Serve with spiced butter and real maple syrup!
