Open Faced Chicken Sloppy Joes

Ingredients:

1 lb Ground Chicken
2 Tbsp Unsalted Butter
1/2 Yellow Onion, diced
10 oz Tomato Sauce
1/2 Cup Ketchup
2 Tbsp Worcestershire Sauce
1 Tbsp White Vinegar
1 Tbsp Yellow Mustard
1 Heaping Tbsp Brown Sugar
1/2 Tsp Garlic Powder
1/2 Tsp Onion Powder
1/2 Tsp Salt
1/4 Tsp Pepper
8 Slices Garlic Texas Toast
8 oz Shredded Mozzarella Cheese

Directions:

  1. Preheat oven to 425 degrees F. Line a baking sheet with parchment paper. Place the Texas Toast on the baking sheet. Set aside.
  2. Heat a large skillet over medium heat. Add the ground chicken and cook until completely cooked through, crumbling as it cooks, about 7-8 minutes. Drain most of the grease from the skillet (keep the meat in the skillet).
  3. Reduce the heat to medium and add the butter and onions. Stir to combine and continue to cook for 2-3 minutes or until the onions start to soften.
  4. Add the tomato sauce, ketchup, Worcestershire sauce, white vinegar, yellow mustard, brown sugar, garlic powder, onion powder, salt, and pepper. Stir to combine and bring the sauce to boil. Once boiling, reduce the heat to simmer for about 7-8 minutes or until the mixture has thickened.
  5. ****If the sauce does not thicken, combine 1 Tbsp cornstarch with 1 Tbsp water. Add to the skillet and stir to combine. It will act as a thickener and help the sauce thicken.
  6. Bake the Texas Toast according to package instructions, about 8-10 minutes.
  7. Remove from the oven and top each with the Sloppy Joe mixture, about ½ cup each.
  8. Top each with a heap of mozzarella cheese.
  9. Return to the oven for 3-4 minutes or until the cheese is melted.
  10. Remove from the oven and serve immediately. Enjoy!
