1 lb Ground Beef (you can also use Ground Chicken or Ground Turkey)
1 1/2 Tbsp Chili Powder
1 Tsp Cumin
1 Tsp Dried Oregano
1/4 Tsp Cayenne Pepper
Salt
Black Pepper
28 oz Can Crushed Tomatoes
15 oz Can Pinto Beans, drained and rinsed
4 oz Can Green Chilies
Fritos, for serving
Shredded Cheddar Cheese, for serving
Jalapeno, thinly sliced, for serving
Directions:
Prepare your ingredients. Chop the onion, mince the garlic, drain and rinse the beans.
Heat oil in a large pot or deep skillet over medium heat. Add 2/3 of the onion and cook until soft and translucent, about 5 minutes. Add the garlic and cook until fragrant, about 30 seconds. Add the tomato paste and stir to combine.
Add the ground beef and cook, crumbling as it cooks, until completely cooked through, about 7-8 minutes.
Add the chili powder, cumin, oregano, and cayenne. Liberally season with salt and pepper. Stir to combine.
Add the entire can of crushed tomatoes, pinto beans, and entire can of green chilies. Stir to combine and bring to a boil. Reduce the heat to low and simmer for 20 minutes.
Assemble the bowls. Line Fritos around the perimeter of the bowl (or plate). Use a ladle to add a scoop of the beef mixture to the center of the bowl. Garnish with shredded cheese, chopped onion, and sliced jalapeno. Serve immediately and enjoy!
