Ingredients:
| 2 Tbsp Olive Oil |
| 1 Large White Onion, chopped |
| 3 Garlic Cloves, minced |
| 2 1/2 Tbsp Tomato Paste |
| 1 lb Ground Beef (you can also use Ground Chicken or Ground Turkey) |
| 1 1/2 Tbsp Chili Powder |
| 1 Tsp Cumin |
| 1 Tsp Dried Oregano |
| 1/4 Tsp Cayenne Pepper |
| Salt |
| Black Pepper |
| 28 oz Can Crushed Tomatoes |
| 15 oz Can Pinto Beans, drained and rinsed |
| 4 oz Can Green Chilies |
| Fritos, for serving |
| Shredded Cheddar Cheese, for serving |
| Jalapeno, thinly sliced, for serving |
Directions:
- Prepare your ingredients. Chop the onion, mince the garlic, drain and rinse the beans.
- Heat oil in a large pot or deep skillet over medium heat. Add 2/3 of the onion and cook until soft and translucent, about 5 minutes. Add the garlic and cook until fragrant, about 30 seconds. Add the tomato paste and stir to combine.
- Add the ground beef and cook, crumbling as it cooks, until completely cooked through, about 7-8 minutes.
- Add the chili powder, cumin, oregano, and cayenne. Liberally season with salt and pepper. Stir to combine.
- Add the entire can of crushed tomatoes, pinto beans, and entire can of green chilies. Stir to combine and bring to a boil. Reduce the heat to low and simmer for 20 minutes.
- Assemble the bowls. Line Fritos around the perimeter of the bowl (or plate). Use a ladle to add a scoop of the beef mixture to the center of the bowl. Garnish with shredded cheese, chopped onion, and sliced jalapeno. Serve immediately and enjoy!
