Preheat the oven to 350 degrees F. Spray a 9x13 baking dish with cooking spray.
Use a long bread knife to slice the rolls in half. Keep the rolls attached to each other, do not separate into individual rolls. Place the bottom half of the rolls in the baking dish.
Layer the turkey across the rolls. Add the cranberry sauce and spread over the top of the turkey.
Layer the provolone on top of the cranberry sauce.
Place the top half of the rolls on top.
Melt the butter in a microwave safe bowl. Once melted, stir in the Dijon mustard, Worcestershire sauce, dried onion, and poppy seeds. Drizzle evenly over the top of the rolls.
Cover with foil and bake for 18-20 minutes. The cheese should be melted, and the turkey heated through. Remove the foil and bake for another 3-5 minutes to crisp up the top of the rolls.
