Air Fryer Hot Lemon Pepper Chicken Skewers

Ingredients:

1 lb Boneless Skinless Chicken Breasts
1 Tbsp Lemon Pepper Seasoning
1 Tbsp + 1 Tsp Paprika, divided
1 1/4 Tsp Salt, divided
1 1/2 Tsp Pepper, divided
Zest from 2 Lemons, divided
2-3 Garlic Cloves, minced
2 1/2 Tbsp Frank's Hot Sauce, divided
2 Tbsp Olive Oil
1 Stick Unsalted Butter
1 1/2 Tsp Garlic Powder
Juice from 1/2 a Lemo
1 Tsp Honey
6 8-inch Wooden Skewers

Directions:

  1. Soak wooden skewers in water for at least 30 minutes.
  2. Cut the chicken into 2-inch pieces and place in a Ziploc bag. Drizzle with olive oil and toss to coat.
  3. In a small bowl, combine the lemon pepper seasoning, 1 Tbsp paprika, ½ tsp pepper, zest from 1 lemon, garlic, 1 tsp salt, and 1 Tbsp hot sauce. Add to the chicken. Seal the bag and shake to coat the chicken.
  4. Thread the chicken onto the skewers, leaving no space between each piece of chicken. Set aside.
  5. Melt the butter in a microwave safe bowl. Add 1 tsp pepper, 1 tsp paprika, garlic powder, zest from 1 lemon, juice from ½ a lemon, 1 ½ Tbsp hot sauce, ¼ tsp salt, and honey. Whisk to combine.
  6. Divide the sauce in ½. One half will be used to baste the chicken while it cooks. The other half will be used to top the chicken before serving.
  7. Spray the air fryer basket with cooking spray. Add 3 skewers. Air fry at 400 degrees F for 5 minutes. Flip the skewers. Baste the skewers and air fry at 400 degrees F for an additional 2 minutes. Flip the skewers again and baste again. Air fry for another 5 minutes. If needed, cook for an additional 1-2 minutes or until the internal temperature reaches 165 degrees F. Remove to a clean plate and set aside.
  8. Repeat with the other 3 skewers.
  9. Once finished, drizzle the remaining sauce over the top. Serve immediately and enjoy!
