Beyond Meat Patty Melt

Ingredients:

1 lb Beyond Meat
6 Slices Vegan Gouda, recommend Follow Your Heart brand
6 Tbsp Vegan Thousand Island Dressing, recommend Follow Your Heart brand
6 Slices Sourdough Bread, or any bread of choice
Vegan Butter
Salt and Pepper

Directions:

  1. Divide the Beyond Meat into 3 equally sized balls and flatten into oval shaped patties. Season both sides with salt and pepper.
  2. Heat avocado oil in a large skillet over medium heat. Add the patties and cook on each side for 5-6 minutes or until cooked through and an internal temperature of 165 degrees F is reached.
  3. Butter one side of each slice of bread. Heat a separate skillet over medium heat. Place the bread, butter side down, in the skillet. Add a Tbsp of the Thousand Island Dressing to each slice of bread and spread to the sides. Add a slice of cheese on top of the dressing. Continue to heat until the cheese is melted, and the bread is toasted. Remove from the heat.
  4. Place the cooked patties on top of 3 pieces of bread and add another slice on top, to create a sandwich. Slice, serve, and enjoy!
