Ingredients:
| 1 lb Beyond Meat |
| 6 Slices Vegan Gouda, recommend Follow Your Heart brand |
| 6 Tbsp Vegan Thousand Island Dressing, recommend Follow Your Heart brand |
| 6 Slices Sourdough Bread, or any bread of choice |
| Vegan Butter |
| Salt and Pepper |
Directions:
- Divide the Beyond Meat into 3 equally sized balls and flatten into oval shaped patties. Season both sides with salt and pepper.
- Heat avocado oil in a large skillet over medium heat. Add the patties and cook on each side for 5-6 minutes or until cooked through and an internal temperature of 165 degrees F is reached.
- Butter one side of each slice of bread. Heat a separate skillet over medium heat. Place the bread, butter side down, in the skillet. Add a Tbsp of the Thousand Island Dressing to each slice of bread and spread to the sides. Add a slice of cheese on top of the dressing. Continue to heat until the cheese is melted, and the bread is toasted. Remove from the heat.
- Place the cooked patties on top of 3 pieces of bread and add another slice on top, to create a sandwich. Slice, serve, and enjoy!
