Vegan Beyond Meat Thai Lettuce Wraps





Ingredients:

1 Package Beyond Meat Plant Based Ground+ Add to Shopping List |
2-3 Small Yellow Onions, chopped+ Add to Shopping List |
2-3 Garlic Cloves, minced+ Add to Shopping List |
1/2 Tsp Crushed Red Pepper Flakes+ Add to Shopping List |
3 Tbsp Hoisin Sauce+ Add to Shopping List |
1 1/2 Tsp Fresh Grated Ginger+ Add to Shopping List |
1 Tbsp Sesame Seeds, plus more for topping+ Add to Shopping List |
1 Tbsp Rice Wine VInegar+ Add to Shopping List |
1 Bunch Green Onions, chopped+ Add to Shopping List |
Bib Lettuce, for serving+ Add to Shopping List |
Directions:
- Heat a large skillet over medium heat. Add the beyond meat, onion, and garlic. Cook for about 7-8 minutes or until completely cooked, breaking apart the beyond meat as it cooks.
- Add the red pepper flakes and stir to combine.
- Add the fresh ginger and stir to combine.
- Add the hoisin sauce, rice wine vinegar, sesame seeds and about 90% of the chopped green onion (save some for topping). Stir to combine and continue to heat for about 5 minutes.
- Lay out the bib lettuce on a plate and scoop the mixture into each lettuce “cup”. Sprinkle with additional sesame seeds and chopped green onion. Serve immediately.
