Vegan Beyond Meat Thai Lettuce Wraps

Ingredients:
1 Package Beyond Meat Plant Based Ground
2-3 Small Yellow Onions, chopped
2-3 Garlic Cloves, minced
1/2 Tsp Crushed Red Pepper Flakes
3 Tbsp Hoisin Sauce
1 1/2 Tsp Fresh Grated Ginger
1 Tbsp Sesame Seeds, plus more for topping
1 Tbsp Rice Wine VInegar
1 Bunch Green Onions, chopped
Bib Lettuce, for serving
Directions:
Heat a large skillet over medium heat. Add the beyond meat, onion, and garlic. Cook for about 7-8 minutes or until completely cooked, breaking apart the beyond meat as it cooks.
Add the red pepper flakes and stir to combine.
Add the fresh ginger and stir to combine.
Add the hoisin sauce, rice wine vinegar, sesame seeds and about 90% of the chopped green onion (save some for topping). Stir to combine and continue to heat for about 5 minutes.
Lay out the bib lettuce on a plate and scoop the mixture into each lettuce “cup”. Sprinkle with additional sesame seeds and chopped green onion. Serve immediately.
