Beyond Meat Sliders

Ingredients:

SLIDER INGREDIENTS
1 lb Beyond Meat
1 Package King's Hawaiian Sliders (12 pack), or any plant-based rolls
1/2 Tbsp Garlic Powder
1 Tsp Salt
1/2 Tsp Black Pepper
10 Slices Vegan Smoked Gouda, recommend Follow Your Heart brand
CARAMELIZED ONIONS INGREDIENTS
2 Tbsp Vegan Butter
2 Yellow Onions, sliced
1 Tsp Sugar
1 Tsp Salt
2 Tbsp Balsamic Vinegar
2 Garlic Cloves, minced
1 Tsp Dried Thyme
1 Tsp Crushed Red Pepper Flakes
HERB BUTTER SAUCE INGREDIENTS
3 Tbsp Vegan Butter, melted
1/2 Tsp Garlic Powder
1/2 Tsp Dried Oregano
1/4 Tsp Dried Basil
1/2 Tbsp Dried Parsley Leaves
Pinch of Salt

Directions:

  1. Start by making the caramelized onions. Cut the onions into strips. Melt butter in a large skillet over medium heat. Add the onions and cook for about 10 minutes or until soft and translucent.
  2. Season with sugar and salt, stir to combine. Reduce the heat to low and continue to cook, stirring occasionally, for about 30 minutes or until the onions start to turn brown and caramelize.
  3. Add the balsamic, garlic, thyme, and red pepper flakes. Stir to combine and heat for 2-3 more minutes. Remove from the heat and set aside.
  4. Next, prepare the sliders. Preheat the oven to 350 degrees F. Add the beyond meat, salt, pepper, and garlic powder to a large bowl. Mix until well combined.
  5. Place in a 9x13 baking dish and press down into a rectangular shape that is approximately the same size as the King’s Hawaiian sliders (should be slightly smaller than the baking dish). Bake for 20-25 minutes.
  6. Line a baking sheet with parchment paper. Use a long bread knife to slice the rolls in half. Keep the rolls attached to each other, do not separate into individual rolls. Place the bottom half of the rolls on the baking sheet. Carefully transfer the cooked meat on top of the rolls. Top with the sliced gouda and caramelized onions. Place the top half of the rolls on top on the onions.
  7. Melt the butter in a small microwave safe bowl. Add the garlic powder, dried oregano, dried basil, dried parsley, and salt. Mix until well combined. Brush over the top of the rolls.
  8. Bake, uncovered, for an additional 10 minutes or until the cheese is melted and the rolls are toasted.
  9. Slice, serve, and enjoy!
  10. Any leftovers should be cooled completely and stored in an airtight container in the fridge.
