Jalapeno Popper Chicken Skillet





Ingredients:
| 1 Rotisserie Chicken, deboned and shredded |
| 6 Slices of Bacon, cooked and chopped |
| Olive Oil |
| 2 Jalapenos |
| 3 Garlic Cloves, minced |
| Salt |
| 8 oz Cream Cheese |
| 1/2 Cup Heavy Cream |
| 6 oz Shredded Cheddar Cheese |
| Fresh Chopped Cilantro |
Directions:
- Preheat the oven to 350 degrees F. Debone and shred the rotisserie chicken. Cook and chop the bacon. Dice 1 ½ of the jalapenos, slice the other ½ of the jalapeno. Set aside.
- Heat oil in a large oven-safe skillet over medium heat. Add the diced jalapenos and garlic and cook for about 1-2 minutes or until softened. Season with salt.
- Add the cream cheese and stir in until melted.
- Add heavy cream and stir to combine.
- Add the rotisserie chicken and 90% of the bacon and stir to combine. Press down into a flat layer.
- Sprinkle the shredded cheese over the top. Bake for 15 minutes or until the cheese is melted and bubbling.
- Top with the rest of the chopped bacon, sliced jalapenos, and chopped cilantro. Serve warm and enjoy!
