Ingredients:
| 3 (3 oz) Packages Instant Ramen, discard seasoning packets |
| 1 Tbsp Olive Oil |
| 8 Slices Bacon, sliced into 1/2-inch pieces |
| 3 Garlic Cloves, minced |
| 2 Large Eggs |
| 3/4 Cup Grated Parmesan, plus more for topping |
| Salt |
| Pepper |
| Fresh Chopped Parsley |
Directions:
- Bring a large pot of water to a boil and cook the noodles according to package instructions. Reserve ¼ cup of the liquid then drain. Add the olive oil to the noodles and toss to coat. Set aside.
- Add the chopped bacon to a large skillet and cook over medium heat until browned and crisp. Add the garlic and stir to combine. Add the noodles and stir to combine and coat with the bacon grease. Remove from the heat.
- Whisk the eggs in a small bowl. Add the parmesan and stir to combine. Pour into the skillet and toss to combine. Add the reserve liquid as needed to loosen the noodles. The heat from the pan will cook the eggs. Season with salt and pepper.
- Divide into serving bowls. Top with additional parmesan cheese and fresh chopped parsley. Serve and enjoy!
