Ingredients:
| 1 lb Rotini or Rigatoni Pasta |
| Olive Oil |
| Salt |
| Black Pepper |
| 1 lb Hot or Mild Italian Sausage or Spicy Turkey Sausage |
| 1 lb Broccoli Florets, chopped into small pieces |
| 1 Small Onion, chopped |
| 6-7 Garlic Cloves, minced |
| 1 Cup Heavy Cream |
| 2 Tsp Lemon Zest |
| 1 Tbsp Fresh Chopped Basil |
| 1 1/2 - 2 Cups Pecorino Romano or Parmesan Cheese, finely grated |
| 8 oz Fresh Mozzarella Pearls or Burrata Cheese |
Directions:
- Bring a large pot of salted water to a boil. Cook the noodles according to package instructions. Reserve 2 cups of pasta water and drain the rest. Set aside.
- In a large skillet over medium heat, cook the sausage. Break apart as it cooks, about 8-10 minutes. Remove to a paper towel lined plate and set aside.
- In the same skillet, heat oil over medium heat. Add the broccoli and cook until warmed through and tender, about 6-8 minutes. Transfer to a plate and set aside.
- In the same skillet, heat oil over medium heat. Add the onion and sauté until translucent. Add the garlic and cook for another minute.
- Add the heavy cream, lemon zest, basil, and 1 cup of the reserved pasta water. Stir to combine. Season with salt and pepper.
- Add the noodles and stir to coat. Bring to a simmer and continue to cook, stirring the pasta and adding additional pasta water if needed to loosen the sauce.
- Add the sausage, broccoli, and cheese. Stir to combine. Let cook for 2-3 minutes then turn off the heat.
- Portion into bowls to serve. Garnish with fresh mozzarella pearls or break apart burrata cheese and distribute over the top. Serve and enjoy!
