Sausage & Gorgonzola Stuffed Mushrooms

Ingredients:
1 lb baby bellas, smaller size
4 tablespoons olive oil
Salt, to taste
2 links hot Italian sausage, casing removed
1 shallot, minced
1 egg
1/4 cup breadcrumbs
1/4 cup Italian gorgonzola, crumbled
1 tablespoon chopped fresh rosemary
Pepper, to taste
Directions:
For mushrooms, remove stems & using a damp paper towel, wipe clean and place in bowl. Toss mushrooms with oil, salt & pepper and place on greased baking sheet, bottoms up.
In separate mixing bowl combine uncooked sausage with the shallot, egg, breadcrumbs and mix well. Then carefully mix in the cheese and rosemary. Spoon filling heaping full in each mushroom. Bake at 375 degrees F for about 20 minutes. Serve hot!
