Sausage & Broccoli Pasta

Ingredients:

1 lb Rotini or Rigatoni Pasta
Olive Oil
Salt
Black Pepper
1 lb Hot or Mild Italian Sausage or Spicy Turkey Sausage
1 lb Broccoli Florets, chopped into small pieces
1 Small Onion, chopped
6-7 Garlic Cloves, minced
1 Cup Heavy Cream
2 Tsp Lemon Zest
1 Tbsp Fresh Chopped Basil
1 1/2 - 2 Cups Pecorino Romano or Parmesan Cheese, finely grated
8 oz Fresh Mozzarella Pearls or Burrata Cheese

Directions:

  1. Bring a large pot of salted water to a boil. Cook the noodles according to package instructions. Reserve 2 cups of pasta water and drain the rest. Set aside.
  2. In a large skillet over medium heat, cook the sausage. Break apart as it cooks, about 8-10 minutes. Remove to a paper towel lined plate and set aside.
  3. In the same skillet, heat oil over medium heat. Add the broccoli and cook until warmed through and tender, about 6-8 minutes. Transfer to a plate and set aside.
  4. In the same skillet, heat oil over medium heat. Add the onion and sauté until translucent. Add the garlic and cook for another minute.
  5. Add the heavy cream, lemon zest, basil, and 1 cup of the reserved pasta water. Stir to combine. Season with salt and pepper.
  6. Add the noodles and stir to coat. Bring to a simmer and continue to cook, stirring the pasta and adding additional pasta water if needed to loosen the sauce.
  7. Add the sausage, broccoli, and cheese. Stir to combine. Let cook for 2-3 minutes then turn off the heat.
  8. Portion into bowls to serve. Garnish with fresh mozzarella pearls or break apart burrata cheese and distribute over the top. Serve and enjoy!
