Oktoberfest Burger with Beer Cheese

Ingredients:
BURGER INGREDIENTS
1 lb Ground Beef or Ground Chicken
1 1/2 Tbsp Dijon Mustard
1 Tsp Garlic Powder
3/4 Tsp Salt
1/2 Tsp Black Pepper
1-2 Large White Onions, thinly sliced
1 Tbsp Butter
4 Pretzel Buns
BEER CHEESE INGREDIENTS
1 Tbsp butter
1 1/2 Tbsp All Purpose Flour
1/2 Cup Milk
1/3 Cup Beer, preferably a wheat, ale, or pilsner
1 Tsp Worcestershire Sauce
1/4 Tsp Dijon Mustard
1/4 Tsp Garlic Powder
Sprinkle of Paprika
Pinch of Salt
1 Cup Cheddar Cheese, shredded
Directions:
- Slice the onion into thin strips. Melt the butter in a large skillet over low heat. Add the onions and stir to combine. Season with salt. Cook the onions low and slow, stirring occasionally for about 30-40 minutes. The onions should turn a golden-brown color and start to caramelize.
- While the onions cook, prepare the burgers. Combine the ground beef (or chicken), Dijon mustard, garlic powder, salt, and pepper. Form into 4 patties.
- Heat a skillet over medium heat and add the patties. Cook on each side for 6-7 minutes or until the desired doneness is reached, for beef. For chicken, cook until the internal temperature is 165 degrees F.
- While the burgers cook, prepare the beer cheese sauce. Melt the butter in a saucepan over medium heat. Whisk in the flour. It will form a paste.
- Whisk in the milk and stir until well combined.
- Add the beer, Worcestershire, mustard, garlic powder, paprika, and salt. Whisk to combine and continue to cook.
- Add the shredded cheese and whisk to combine. Continue to stir until completely melted. Let sit for a few minutes to thicken.
- When ready to build your burger, start with the pretzel bun base, add a burger, top with beer cheese, then some caramelized onions. Add the top half of the bun. Serve and enjoy!
