Blue Cheeseburgers with Caramelized Onions

Ingredients:
2 large yellow onions, thinly sliced
2 tablespoons butter, plus more for buns
2 tablespoons brown sugar
2 tablespoons balsamic vinegar
4 large butter toasted hamburger or Kaiser Buns
1 lb lean ground beef
1 cup Crumbled Blue Cheese
1 teaspoon Montreal Seasoning
8 slices cooked bacon, for topping
4 slices Swiss or Jarlsberg cheese, for topping
Sea Salt, to taste
Freshly ground pepper, to taste
Directions:
Caramelized onions: Preheat large skillet on medium high heat. Add butter and sliced onions and sauté until translucent, about 10 minutes. Add brown sugar and reduce heat to medium low and cook until onions are browned and caramelized, about 15 minutes, stirring occasionally.
Add balsamic vinegar and cook until almost completely evaporated, about 5 minutes more. Remove from heat and season to taste with salt and pepper.
Burgers: Meanwhile, make the burgers. Mix together burger ingredients in bowl and shape into 4 patties. Preheat grill to medium-high and cook burgers on both sides until internal temp reaches 160 degrees F and juices run clear. Top each burger with a slice of Swiss or Jarlsberg cheese the last minute of cooking time. Transfer to platter, cover, and let rest 5 minutes.
Cover bottom of each toasted bun with 1/4 cup of the caramelized onions, place burger over onions and top each burger with 2 slices bacon and the top half of the toasted bun.
