Oktoberfest Burger with Beer Cheese

Ingredients:

BURGER INGREDIENTS
1 lb Ground Beef or Ground Chicken
1 1/2 Tbsp Dijon Mustard
1 Tsp Garlic Powder
3/4 Tsp Salt
1/2 Tsp Black Pepper
1-2 Large White Onions, thinly sliced
1 Tbsp Butter
4 Pretzel Buns
BEER CHEESE INGREDIENTS
1 Tbsp butter
1 1/2 Tbsp All Purpose Flour
1/2 Cup Milk
1/3 Cup Beer, preferably a wheat, ale, or pilsner
1 Tsp Worcestershire Sauce
1/4 Tsp Dijon Mustard
1/4 Tsp Garlic Powder
Sprinkle of Paprika
Pinch of Salt
1 Cup Cheddar Cheese, shredded

Directions:

  1. Slice the onion into thin strips. Melt the butter in a large skillet over low heat. Add the onions and stir to combine. Season with salt. Cook the onions low and slow, stirring occasionally for about 30-40 minutes. The onions should turn a golden-brown color and start to caramelize.
  2. While the onions cook, prepare the burgers. Combine the ground beef (or chicken), Dijon mustard, garlic powder, salt, and pepper. Form into 4 patties.
  3. Heat a skillet over medium heat and add the patties. Cook on each side for 6-7 minutes or until the desired doneness is reached, for beef. For chicken, cook until the internal temperature is 165 degrees F.
  4. While the burgers cook, prepare the beer cheese sauce. Melt the butter in a saucepan over medium heat. Whisk in the flour. It will form a paste.
  5. Whisk in the milk and stir until well combined.
  6. Add the beer, Worcestershire, mustard, garlic powder, paprika, and salt. Whisk to combine and continue to cook.
  7. Add the shredded cheese and whisk to combine. Continue to stir until completely melted. Let sit for a few minutes to thicken.
  8. When ready to build your burger, start with the pretzel bun base, add a burger, top with beer cheese, then some caramelized onions. Add the top half of the bun. Serve and enjoy!
