Pimento Cheese Jalapeno Poppers

Ingredients:

8 oz Cream Cheese, softened
4 oz Jar Pimentos, drained
1/2 Tsp Garlic Powder
1/2 Tsp Salt
Pinch of Cayenne Pepper
1 3/4 Cups Shredded Cheddar Cheese
20 Jalapenos
Sliced Chives, for topping

Directions:

  1. Preheat the oven to 400 degrees F and line a baking sheet with parchment paper.
  2. Remove the stem and core/seed each jalapeno, then slice in half. Line the jalapeno halves on the baking sheet.
  3. Combine the cream cheese, pimentos, and shredded cheese in a large bowl. Season with garlic powder, salt, and cayenne pepper. Mix until well combined.
  4. Add the pimento cheese mixture to each jalapeno half.
  5. Bake for 10-12 minutes or until the cheese is melted and the jalapenos are tender.
  6. Top with sliced chives, serve, and enjoy!
