Chicken Meatball Subs on a Stick

Ingredients:

10 Wooden Skewers
30 Mozzarella Cubes, about 1/2-inch in size
1 Tube Store Bought Pizza Dough or 1 Loaf Frozen Pizza Dough (thawed)
Marinara Sauce, for dipping
2 lb Ground Chicken
2 Large Eggs
2/3 Cup Breadcrumbs
1/2 Cup Grated Parmesan Cheese
1 Small Onion, shredded
10 Garlic Cloves, minced and divided
4 Tsp Salt
2 Tsp Red Pepper Flakes
1 1/2 Tbsp Dried Oregano
1 1/2 Tbsp Dried Basil
1 1/2 Tbsp Dried Parsley
1/4 Cup Butter, melted
2 Tbsp Fresh Chopped Parsley

Directions:

  1. Preheat the oven to 375 degrees F and line 2 baking sheets with parchment paper.
  2. In a large mixing bowl, combine the ground chicken, eggs, breadcrumbs, parmesan, onion, 6 garlic cloves, salt, chili flakes, dried oregano, dried basil, and dried parsley. Mix until just combined
  3. Shape into 30 meatballs and roll each around one mozzarella cube. Set aside.
  4. Unroll the pizza dough and cut into 10 strips.
  5. Insert skewer through one end of the dough, then add a meatball and wrap the dough around the top of the meatball and onto the skewer. Repeat this with 2 more meatballs, ending with dough on top. Assemble the remaining 9 skewers. Place on the 2 prepared baking sheets, spaced apart.
  6. Combine the melted butter, 4 remaining garlic cloves, and parsley in a small bowl. Divide into 2 separate bowls and set one aside.
  7. Brush the melted butter from one bowl over the skewers.
  8. Bake for 20-25 minutes or until the meatballs are cooked through and the dough is golden brown. The internal temperature should be 165 degrees F.
  9. Brush the remaining melted butter over the skewers using a separate/clean brush. Sprinkle with additional parmesan cheese, optional.
  10. Serve with marinara sauce on the side for dipping. Enjoy!
