Ingredients:
| 6 Boneless Pork Chops, about 1-inch thick |
| Salt |
| Black Pepper |
| Olive Oil |
| Juice from 20 oz Can Pineapple Tidbits |
| 1 Cup Pineapple Tidbits (from the same 20 oz can) |
| 1/4 Cup BBQ Sauce, any brand of choice |
| 1/4 Cup Light Brown Sugar, packed |
| 1 Tsp Sea Salt |
| 1 Tsp Ground Ginger |
| 1 Tsp Garlic Powder |
| 1 Tsp Dried Minced Onion |
Directions:
- Combine the pineapple juice, BBQ sauce, brown sugar, sea salt, ginger, garlic powder, and minced onion in a mixing bowl. Set aside.
- Season the pork chops with salt and pepper on both sides.
- Heat oil in a large skillet over medium-high heat. Add the pork chops and cook on each side for about 2 minutes. Transfer to a plate and set aside. They will not be completely cooked through.
- Add the sauce to the skillet, bring to a boil, then reduce the heat to medium-low. The sauce will be thin. If you want a thicker sauce, combine 1 Tbsp cornstarch with 1 Tbsp water and stir into the sauce.
- Return the pork chops to the skillet and simmer in the sauce for 8-10 minutes, flipping halfway, or until the internal temperature reaches 145 degrees F.
- Add the pineapple tidbits and stir to combine and heat.
- Serve warm and enjoy!
