1 package French Vanilla Instant Jell-O Pudding mix
1/2 fresh pineapple, cut in thin slices
Directions:
In mixing bowl combine coconut milk and pudding mix and chill.
Place marmalade with 1/2 cup water in saucepan over medium heat, mixing until it turns into a glaze. Brush glaze on sponge cake top until it soaks in, saving 1/4 cup glaze for top.
Spray slices of pineapple with pan spray and grill on high heat, both sides, until grill marks show. Spread pudding mixture in tart shell to cover top. Layer slices of pineapple to cover top, brush on remaining glaze and serve or chill until ready to serve. Sprinkle on toasted coconut for garnish if you like.
