BBQ Pineapple Pork Chops

Ingredients:

6 Boneless Pork Chops, about 1-inch thick
Salt
Black Pepper
Olive Oil
Juice from 20 oz Can Pineapple Tidbits
1 Cup Pineapple Tidbits (from the same 20 oz can)
1/4 Cup BBQ Sauce, any brand of choice
1/4 Cup Light Brown Sugar, packed
1 Tsp Sea Salt
1 Tsp Ground Ginger
1 Tsp Garlic Powder
1 Tsp Dried Minced Onion

Directions:

  1. Combine the pineapple juice, BBQ sauce, brown sugar, sea salt, ginger, garlic powder, and minced onion in a mixing bowl. Set aside.
  2. Season the pork chops with salt and pepper on both sides.
  3. Heat oil in a large skillet over medium-high heat. Add the pork chops and cook on each side for about 2 minutes. Transfer to a plate and set aside. They will not be completely cooked through.
  4. Add the sauce to the skillet, bring to a boil, then reduce the heat to medium-low. The sauce will be thin. If you want a thicker sauce, combine 1 Tbsp cornstarch with 1 Tbsp water and stir into the sauce.
  5. Return the pork chops to the skillet and simmer in the sauce for 8-10 minutes, flipping halfway, or until the internal temperature reaches 145 degrees F.
  6. Add the pineapple tidbits and stir to combine and heat.
  7. Serve warm and enjoy!
