Ingredients:
| 1 1/2 Cups All Purpose Flour |
| 2 Large Eggs |
| 1 Cup Grated Parmesan Cheese, plus more for topping |
| 1 Tsp Salt |
| 15 oz Ricotta Cheese |
| 1/2 Cup Pesto, store bought or homemade, for serving |
Directions:
- Add the ricotta to a fine mesh strainer and let sit and drain for about 30 minutes. Try to get as much excess liquid out as possible.
- Add all ingredients to a mixing bowl and mix until well combined. The dough will be slightly sticky. Refrigerate for 20-30 minutes.
- Lightly flour the counter and remove the dough. Divide into pieces and roll into strips about ½-inch thick. Cut into 1-inch pieces. Dust with flour as needed to prevent sticking.
- Bring a pot of salted water to a boil. Add the gnudi. It will sink then float to the surface. Once floating, let boil for 3-4 minutes.
- Use a slotted spoon to transfer the cooked gnudi to a mixing bowl. Add the pesto and stir to coat.
- Transfer to plates and garnish with additional grated parmesan. serve and enjoy!
