Ingredients:
| 12 Mint Leaves |
| 1/4 Cup Sugar |
| 1/4 Cup Water |
| 3 Cups Seedless Watermelon, cubed |
| Juice of 2 Limes |
| 3 oz White Rum |
Directions:
- Prepare the mint simple syrup. Add the water, sugar, and mint to a small saucepan and heat over medium heat. Bring to a boil, stirring to dissolve the sugar. Cook for about 1 minute then remove from the heat and let cool (keep the mint leaves in the saucepan while it cools). Place a fine mesh strainer over a bowl and pour in the syrup. Discard the mint leaves. Transfer the simple syrup to an airtight container and refrigerate until ready to use.
- Cube the watermelon and place on a baking sheet in a single layer. Place in the freezer for at least 2 hours, if not longer. Keep in freezer until ready to use.
- Prepare the mojitos. Add the frozen watermelon, lime juice, and rum to a blender. Add ¼ cup of the prepared simple syrup. Blend until smooth. Taste and add additional simple syrup if needed.
- Divide between 2 glasses and garnish with mint leaves. Serve and enjoy!
