Blackstone Hot Honey BBQ Chicken Quesadillas





Ingredients:
| Vegetable Oil |
| 1 lb Boneless Skinless Chicken Breast |
| Salt |
| Black Pepper |
| BBQ Seasoning Blend |
| 3 Tbsp BBQ Sauce |
| 2 Tbsp Hot Honey |
| 8 Small Flour Tortillas (6-inch size) |
| Shredded Cheese |
Directions:
- Trim and slice the chicken into small pieces, about ½” in size. Add to a Ziploc bag. Season with a pinch of salt and pepper, and 1-2 Tbsp of a BBQ Seasoning Blend. Seal the bag and toss to coat the chicken.
- Heat the Blackstone to medium heat. You want 2 zones to be heated for maximum cook surface.
- Drizzle oil across the hot griddle surface. Add the chicken and cook, flipping occasionally, until mostly cooked through, about 6 minutes.
- Add the BBQ sauce and honey and toss to coat the chicken. Continue to cook for another 2-3 minutes until the chicken is completely cooked through.
- Heat a separate section of the Blackstone over medium-low heat. Lay out 4 tortillas. Top with shredded cheese. Divide the chicken mixture between the tortillas. Optional: add a drizzle of BBQ sauce and hot honey over the chicken. Top the chicken with additional shredded cheese and place the remaining 4 tortillas on top.
- Let cook for 1-2 minutes to melt the cheese and brown the tortilla, then flip and melt the cheese and brown the other side. Remove to a cutting board.
- Slice in half or quarters, serve, and enjoy!
