Witches Cauldron Brownie Bites

Ingredients:

CUPCAKE INGREDIENTS:
12 Tbsp Unsalted Butter
1/2 Cup Semi-Sweet Chocolate Chips
1/2 Cup Cocoa Powder
1/2 Tsp Instant Ground Coffee
1 Cup Light Brown Sugar, packed
1/2 Cup Sugar
2 Large Eggs + 1 Large Egg Yolk
1 Tsp Vanilla Extract
1 Cup Flour + 2 Tbsp Flour
1/2 Tsp Baking Powder
1/2 Tsp Salt
FROSTING INGREDIENTS:
1 Stick Salted Butter, softened
8 oz Cream Cheese, softened
1 Tsp Vanilla Extract
4-5 Cups Powdered Sugar
Green Food Coloring
Purple Food Coloring
Sprinkles & Candy Eyeballs, for topping

Directions:

  1. Preheat the oven to 350 degrees F and spray a 24 count mini muffin tin with cooking spray.
  2. Add the butter and chocolate chips to a microwave safe bowl and heat in 30 second intervals, stirring in between, until melted and smooth.
  3. Add the cocoa powder and instant coffee and stir to combine. Add the brown sugar and sugar and stir to combine.
  4. Add the eggs and egg yolk, and vanilla, and stir to combine.
  5. In a separate bowl, whisk together the flour, baking powder, and salt. Add the dry ingredients to the wet ingredients and stir until well combined and no streaks remain.
  6. Add about 1 ½ Tbsp into each muffin well. Bake for 16-18 minutes or until a toothpick inserted in the center comes out with fudgy crumbs.
  7. Use a rounded measuring spoon to indent the top of each brownie, creating a well.
  8. Allow the brownies to cool completely.
  9. Prepare the frosting. Add the butter and cream cheese to the bowl of a stand mixer and beat until light and fluffy.
  10. Add the vanilla and beat until combined.
  11. With the mixer on low, slowly add the powdered sugar and continue to mix until well combined. Add additional powdered sugar to reach your desired consistency.
  12. Divide the frosting between two bowls. Add purple food coloring to one and green food coloring to the other and mix to combine.
  13. Add the frosting to separate piping bags or Ziploc bags, snip off the corner and pipe into the indent in each brownie, creating both purple and green cauldrons.
  14. Top with sprinkles and candy eyeballs. Serve and enjoy!
  15. Leftovers should be stored in an airtight container on the counter.
