Bacon Cheeseburger Soup





Serves 4
Ingredients:
| 1 lb lean ground beef |
| 1 cup chopped onion |
| 1 tablespoon fresh minced garlic |
| 1 package dry onion soup mix |
| 1 package real bacon pieces, divided use |
| 1/2 cup flour |
| 4 cups low-sodium chicken broth |
| 1 bottle beer or non-alcoholic beer |
| 1 cup heavy cream |
| 8 oz Velveeta cheese, cubed |
| 2 cups shredded sharp cheddar cheese |
| 1 cup sour cream |
| Seasoned salt, to taste |
| Toasted French-fried onions, for topping |
| 1 cup carrots |
| 1 cup celery |
| Freshly ground pepper, to taste |
Directions:
- Preheat a large soup pot or Dutch oven over medium-high heat. Brown ground beef together with onion, carrots, celery, and garlic. Sprinkle with dry onion soup mix and season with a few grinds of fresh black pepper. Stir in real bacon pieces, reserving 2 tablsepoons. Add flour and cook and stir about 2 minutes.
- Add chicken broth, beer, and heavy cream; bring to a boil. Reduce heat to simmer; add both cheeses and stir until completely melted. Stir in Sour Cream and season to taste with seasoned salt and freshly ground pepper. Ladle into bowls and top with French-fried onions and reserved bacon bits.
