Grilled Pepper Crusted T-Bone Steaks with Worcestershire-Chive Butter





Serves 8
Ingredients:

1 cup coarsely ground fresh black pepper+ Add to Shopping List |
8 T-Bone steaks+ Add to Shopping List |
Olive oil, for brushing+ Add to Shopping List |
Salt, to taste+ Add to Shopping List |
Worcestershire-Chive Butter+ Add to Shopping List |
Pepper, to taste+ Add to Shopping List |
- Preheat grill. Brush steaks with olive oil and season with salt and sprinkle cracked fresh pepper all over the steaks evenly on both sides and press lightly to make the pepper stick. Grill steak until golden brown on one side, about 5 to 6 minutes, turn over and continue grilling 6 to 7 minutes for medium-rare doneness. Remove from the grill and top with a slice of the butter.

1 teaspoon finely chopped garlic+ Add to Shopping List |
2 sticks unsalted butter, at room temperature+ Add to Shopping List |
1/4 cup Worcestershire sauce+ Add to Shopping List |
2 tablespoons dry mustard+ Add to Shopping List |
3 tablespoons finely chopped chives+ Add to Shopping List |
Salt, to taste+ Add to Shopping List |
Freshly ground pepper, to taste+ Add to Shopping List |
- Heat oil in a medium skillet add shallots and garlic and cook until soft, let cool slightly. Place butter in a small bowl and add shallot mixture, Worcestershire, mustard and chives and mix until combined. Season with salt and pepper to taste. Scrape mixture into the center of a piece of waxed paper and roll into a log. Refrigerate until firm.
