Mozzarella Stuffed Mushrooms

Serves 4


Ingredients:

8 oz fresh button mushrooms, stems removed
2 tablespoons olive oil
Salt, to taste
8 oz fresh mozzarella, cut in 1-inch cubes
1/2 cup shredded parmesan
2 tablespoons fresh thyme
Pepper, to taste

Directions:

  1. Place mushrooms in large bowl, add olive oil, salt & pepper and toss well.
  2. Place mushrooms on cookie sheet, bottom side up, and broil 5-8 minutes. Remove and place one piece mozzarella on each, then sprinkle with parmesan.
  3. Place back under broiler until parmesan is lightly golden. Remove and sprinkle tops with fresh thyme and serve!
