Open up skin on each, enough so you can fit the herbs inside. Take 1 sprig Italian parsley, rosemary and sage, and 2 sliced cloves garlic for each breast and lay all inside under the skin. Rub each breast with 2 tablespoons olive oil, then sprinkle with salt, pepper, 1 teaspoon of dried thyme and rosemary.
Place both in a large baking dish, bake at 425 degrees F for 15- 20 minutes or until the skin is turning a golden color. Turn down heat to 350 degrees F and bake an additional 35 minutes.
Remove from oven and let rest 8 minutes before cutting. Those beautiful herbs inside flavor the meat so nicely!
