Roasted Pepper & Bacon Frittata

Ingredients:
1/4 cup bacon, cooked & chopped
1 cup dicedmonterey jack cheese
3/4 cup chopped roasted bell peppers
1/2 cup chives
1 tablespoon oregano, chopped
6 eggs
1/2 cup cream
2 tablespoon red wine vinegar
Salt, to taste
Pepper, to taste
Directions:
In bowl combine eggs, cream, herbs, salt and pepper, whipping until fluffy, set aside.
In 8-9" skillet on medium heat cook cheeese until lightly brown, then add bacon and warm through. To skillet add vinegar, stir through, then add egg mixture and turn heat to low, cover and let cook for up to 20 minutes. You can also place the whole skillet in oven at 350' if your pan is ovensafe and cook it that way. Your dish is done when the center comes clean with a toothpick, or when there is no more jiggle.
