Potato Gnocchi with Creamy Ham & Peas





Serves 4
Ingredients:
| 1 package Gia Russo Gnocchi, (16 oz.) |
| 8 oz ham, diced |
| 1 roasted bell pepper, chopped |
| 1 tablespoon olive oil |
| 1 tablespoon butter |
| 2 cloves garlic, minced |
| 1/2 cup white wine or chicken broth |
| 1 cup heavy cream |
| 1/2 cup parmesan, grated |
| 3/4 cup fresh peas |
| Salt, to taste |
| Pepper, to taste |
Directions:
- Place saucepan on medium-high heat and add butter and oil. When butter is melted add garlic, ham and peppers. Stir, cooking 2 minutes. Then add wine and cream. Bring to a boil, then simmer 5 minutes.
- Meanwhile bring pot of salted water to a boil. Add gnocchi and cook 2-3 minutes. Strain and add to cream sauce along with parmesan, peas and seasoning. Toss well and serve immediately. Jazz it up with some fresh basil if you like!
