Jamaican Jerk Pork Roast

Serves 4


Ingredients:

3 lb bone-in pork roast
4 cloves garlic
1 shallot
1 tablespoon fresh lime juice
1 chipotle pepper in Adobo Sauce
2 teaspoons cinnamon
1 tablespoons ground cumin
1 teaspoon cloves
1 teaspoon allspice
1/4 cup olive oil
Salt, to taste

Directions:

  1. Preheat oven to 430 degrees F. Place roast fat side up on a rack in a roasting pan and bake 15-20 minutes minutes at that temperature. Then reduce heat to 390 degrees F for 1 1/2 hours. turn oven off and let rest in the oven for one hour with the door shut. Remove roast and let rest 15 minutes before cutting. Enjoy!
