Chicken with Artichokes and Grape Tomatoes





Serves 2
Ingredients:
| 2 chicken breasts, Amish bone-in |
| 1/2 cup Tom Douglas Chicken Rub |
| 2 tablespoons olive oil |
| 1 1/2 cups artichoke hearts, quartered |
| 1 cup grape tomatoes, halved |
| 1 cup cipollini onions, quartered |
| 2 cups white wine |
| 1 tablespoon unsalted butter |
| 1/4 cup chopped garlic chives |
| Salt, to taste |
| Pepper, to taste |
Directions:
- Rub chicken breasts and cook according to instructions on rub mix.
- In saute pan on high heat add olive oil. Add artichokes, tomatoes and onions and saute for 2 minutes. Add wine and reduce by half. Whisk in butter and season with salt and pepper. Remove from heat and add garlic chives. Serve immediately with your yummy chicken.
