Tomatoes with Rembrandt Cheese Filling





Serves 6-8
Ingredients:
| 8 tomatoes |
| 3 eggs |
| 1 tablespoon bread crumbs |
| 7 oz Rembrandt cheese, grated or shredded |
| 7 oz finely chopped spinach |
| Salt, to taste |
| Pepper, to taste |
Directions:
- Preheat oven to 400 degrees F.
- Cut the top off the tomatoes and take out the pulp with a spoon. Beat the eggs and salt & pepper. Add the bread crumbs, cheese and chopped spinach. Mix well. Fill the tomatoes with this filling and put them in a baking dish.
- Bake the tomatoes for 12 minutes in a preheated oven at 400 degrees F.
